A list of all the differences would probably exceede a page on an average monitor...
For example, refer to the alchemy recipes and all the monsters which aren't avaliable on GK.
GK has no holy symbols (talisman for praying).
Quests work differently on CF (no trading as far as I know).
Stat potions are much more common, hence the high requirements for improved stat scrolls.
Diamonds are much more common on CF.
You can actually trade plats for diamonds.
You can convert altars to your diety (that's what Consecrate is for).
Poison and sickness effects are much faster in CF.
I can't remember CF having Lords or Eventitems.

As for Gods, they are balanced, the main "unbalance" is in the people's different levels, making some effects stronger or weaker than others.
