you could use it for story progression maybe, or for quests that require completion within a certain time limit

Not really. It might be possible to log a player's online time after such a system is set up, but there's currently no way of knowing anything about the time before it.

Both of those examples can be done relatively easily without an onlinetime variable.

And, as has been stated, online time and IP address script vars do not exist

yet.
