I fixing a house where no one can get in...yet

Hey guys I'm into to creating levels and I was having a hard time with certain NPCs. I've seen little Squirrels frolicking about in certain areas and I wanted to know how to set it up so I can have the lil' guys in one of my levels that I'm designing at the moment. Also it would be great if someone can tell me how to change their color from the traditional tan to a nice variety of colors! (This level is going to be dedicated to Animals and I wanted, you know, a sort of 'serenity' feeling to be about when players entered it. Oh before I forget, what happened to the Yoshi head? I used to use that head all the time now I can't find it anywhere!
