It could also be limited to different players trading, so instead of player a and player b switch trading to make an item 1 dollar, just have the one counted trade be set. then after a long while it resets so the trade with player a and player b count again. Nothing to consecutive.

They wouldn't be trying to make it worth $1. They'd just be trading it for $1 to lower the average so that they can get it cheaper.
Even if you only recorded sales between the same two people once, there are still ten different combinations of sales that a single party of 5 people can do:
Member 1 -> Member 2
Member 1 -> Member 3
Member 1 -> Member 4
Member 1 -> Member 5
Member 2 -> Member 3
Member 2 -> Member 4
Member 2 -> Member 5
Member 3 -> Member 4
Member 3 -> Member 5
Member 4 -> Member 5
Now using weighted average, suppose that a 100k gun has been sold for exactly 100k a hundred times. This gives it a very strong average price of 100k. If somebody else came along and sold one for 150k the average price would only move to 100.5k, so barely any effect.
But a single party of 5 people trading it for $1 ten times could move that same weighted average from 100k to 90.9k. Now remember that Graal accounts are essentially free now and can trade, so there is really no limiting factor there.
Like I said before, you could add a threshold, so that it only counts sales within 10% of the existing listed value, but people would still abuse it, it'd just take them longer. And when dramatic changes in value happen overnight (imagine if MP5s were suddenly sold in an NPC shop, or if P90 was buffed to 80 damage) the sudden price change would be outside of that threshold and the prices wouldn't reflect the current value at all, so they'd be useless anyway.
It'd be nice if we could have something like this, but recording player sales isn't the way to do it.
