What would happen if we just took all those ones that don't fit and put them into a dream land that can look all crazy and can only be accessed by falling asleep in a bed? But sure no one supports anything I say so I am just wasting time talking here.

That's what 2k1 is for.
Put all of your "fun stuff" there, so players can have "fun" riding those go-karts. (which nobody actually uses on 2k1)
Keep 2k2 a role playing server only; there will be bugs that will help figure out how to bring the go-karts to the main island.
