They're just not flexible from a scripting position. As far as I know there is absolutely no way to gather sign data from the level from either serverside or clientside, so it's either default signs or completely customized signs from the ground up. If you could at least get sign data on the serverside you could work default signs(which are simple to use when designing levels) into a custom script, but you can't.
