Read the npcprogramming.doc in the Graal folder. I believe it comes with the Graal Development Tools package that you install.

I'm curious as to why you want to learn GS1, an outdated code, rather than GS2. Do you plan to only use the level editor for your own personal creations on your computer, or do you plan to do online work as soon as possible?

I would highly recommend sticking to the Official Graal and learning GS2 (on testbed), or if you must play with it in the offline editor but stay away from anti-graal.
