After reading and doing all the tutorials what would be the next step to do. Should I just do trial and error?

Create a script that you think you are cable of doing (A tailor system?). If you have any issues, come here and post and many will be able to assist you (and usually with useful tips)

try replicating scripts you see on other servers, and just try polish as well as you can, post them on the forums to receive feedback(don't be scared about negative comments, you rarely get any as long you have shown that you've tried) and just further better your understanding of GS2 that way.
